    Mince the boneless Lamb along with the fat and half the onions, sesaon and refrigerate for at least 3 hours. Beat the filet of Lamb with the blunt end of a knife and then cut into thin strips about 6cms in length and i cm thickness, marinate and refrigerate overnight with the oil Saffron and Garlic. Press the mince meat evenly on a flat steel skewer, thread the filet of Lamb on another skewer and thread the tomatoes on another for grilling. Grill all the skewers on a charcoal grill until done, keep turning to cook evenly. Serve hot with white, saffron and Zereshk rice or bread.
