    Santorini Fava Bean and Sage Puree

    In a heavy-bottomed pot, bring lava beans to a boil with 300 ml of water and a whole onion. Boil for 15 minutes over medium heat, skimming frequently. Reduce heat and stir constantly until the fava beans start to dissolve. (Note: Good quality lava beans do not need to be pureed in a mill or processor). Remove from heat, discard onion and add sage leaves. Add olive oil little by little, stirring. Season with salt and pepper. Let fava beans rest, stirring from time to time to prevent a crust from forming. Place beans in individual molds, 7,5 cm in diameter and 3 cm deep. When ready to serve, unmold beans on dish. Garnish with caper sprigs and julienned spring onion leaves. Complete with a drizzle of olive oil and a pinch of oregano.
